I
am a pork lover, and I have loved pork in every kind of
preparation, may it be
boiled, fried, roasted, salad, and so on.
Below is one among my favorite recipe. You can say its boiled,
and then fried without any extra water or oil. And I am sure
you'll love it..
Ingredients:
1 kg raw Pork
Marinade:
½ portion of dried Bhoot jolokia/king chilli (crushed)
(dry red chilli also
can be used if bhoot jolokia is not available)
1/2 tsp red chilli powder
1 tsp ginger and garlic paste
½ tsp turmeric
½ tsp jeera powder
½ tsp coriander powder
2 inches cinnamon stick
2 large onions chopped
3 large tomato chopped
Salt to taste
Method:
Mix pork with crushed bhoot jolokia, red chilli powder,
ginger garlic paste, turmeric, jeera powder, coriander powder, cinnamon,
chopped onion, chopped tomato and salt together. Keep it for a minimum of 30
mins.
Shift all the ingredients to a pressure cooker and cover the
lit. No additional water is required.
Cook in a slight low flame, after 4-5 whistle turn off the
flame and wait till the pressure to come out, which may take 5 – 10 mins. (But
if you are in a hurry, allow up to 6 whistle and manually release the pressure).
Then place the cooker in a medium flame again, and allow the
water to dry. After sometime, the fats start melting and release oil. Let it
fry on its own oil until the color of the dish gets darken. This whole process
again will take 10-15 minutes.
Garnish with chopped coriander and serve hot along with rice and dal.
